Ingredients
500ml double cream
2x200g mascapone (Italian cheese)
4 egg yolks
2 tbsp castor sugar
1 pack lady's fingers
Tia Maria / Kahlua (coffee liqueor)
Coffee (dissolved in hot water)
Dark chocolate
1. Beat double cream and mascapone and sugar till stiff
2. add egg yolks. mix well.
3. mix tia maria/kahlua with coffee, add sugar to taste
4. dip one lady's finger into coffee mixture BRIEFLY (1 second). Line immediately into a baking tin (springform, ie. the side can open). repeat till you have a biscuit base.
5. spoon 1/2 of the double cream/cheese mixture on top of biscuit base. smooth.
6. repeat another layer of biscuit base.
7. spoon remaining double cream on top.
8. shave dark choc to cover top of cake
9. chill in fridge overnight.
